This dish is one of those “what to cook when you are too sick and/or tired to cook” because it is super easy, most of the ingredients are things you have on hand, it requires little active time, and you can start it with frozen chicken breasts!  Even though I rarely eat grains (you can read why here), white rice is the most gentle of grains I have come across.

Whenever any of my dogs have had an upset tummy, this sure fire technique never fails to work.  The method for dogs I learned from my veterinarian is below the recipe.

The funny part is my husband’s reaction:  whenever I make this for the dog, he hovers around the stove and wants some of the chicken and rice too!  So now I make double so he can eat it too. 🙂

 

Ingredients

2 boneless skinless chicken breasts, preferable pasture-raised (can be still frozen!)

1 cup organic white rice

2 cups Raise the Dead Chicken Broth

1-2 tablespoons butter, preferable grass fed, such as Kerry Gold

½ teaspoon unrefined sea salt

½ teaspoon organic garlic powder

1 teaspoon powdered gelatin

 

Method

Put all ingredients except the chicken and butter into a saucepan that has a tight-fitting lid.  The pan needs to be big enough so that the chicken breasts lay flat.  Stir to combine.  Add the chicken and butter, it’s ok that they are frozen and solid.  On medium heat bring the liquid to a boil, stirring a few times, keeping the lid on.

Once it has come to a boil, turn on low heat and set the timer for 30-40 minutes, depending on the thickness of the chicken breast.  Don’t open the lid.  After the time is up, turn off the heat, quickly shred the chicken with a fork and knife and stir to incorporate the chicken with the rice.  Replace the lid and let sit another 10 minutes.

(If you are making this for a dog, make sure it is completely cooled off before you give it to her, but my husband likes it warm. 🙂

Leftovers
There are basically three things I can think of you can do with the leftovers.

  1. Add a little broth and reheat on the stove or in a casserole dish in the oven
  2. Add a lot (a quart or more) of broth and make soup.
  3. Use this for the base of stir fried rice.

 

Technique for Dog Tummy Troubles

So about healing a dog…if your  fur baby has a bout of diarrhea and/or vomiting, but without blood.  I remove all food and water for twenty four hours.  Then I give them this chicken and rice dish over the course of the next twenty four hours, while letting her drink water freely.  If there is no relapse, then I mix it with their regular dog food over the subsequent twenty four hours.  I also give her 1 teaspoon FermPlus Pro therapeutic-grade probiotic mixed with about ½ cup full fat plain yogurt.  This method has always worked for us and has probably saved us countless vet bills.
