I find myself using a lot more of “formulas” than exact recipes in my meal preparation.  I started using the Meat Salad formula when I had to pack my lunch every week for me and my son while we were on the GAPS Diet (a gut-healing diet based on the work of Dr. Natasha Campbell-McBride). It is based off the traditional recipe for tuna salad, like I had as a kid.

For a Healing Lunch On The Go, place in a thick glass container in an insulated lunch bag with a reusable cold pack.  This recipe combines protein, fat and ferments.  What tasty combinations can you come up with?

 

 

Ingredients:

½ cup cooked meat of your choice, such as leftover chicken, roast beef, or even canned tuna

2 ounces raw, whole milk cheddar cheese (optional)

1 hard-boiled egg

1 tablespoon raw fermented sauerkraut

1 tablespoon mayonnaise, sour cream or yogurt

½ teaspoon mustard

Salt and pepper to taste

Method:

Cut the meat up into very small cubes or bite-size pieces.  Cut the cheese up into small cubes, about ½ inch. Cut up the hard-boiled egg into cubes.  Put all the pieces into a mixing bowl.  Take sauerkraut out of the jar with a fork, lay on the cutting board and mince the pieces up with a knife.  Add this to the mixing bowl.

Add the mayo, sour cream or yogurt, the mustard and salt and pepper.  Mix well.  Taste to see if any further seasonings need to be added.
