Roasted Chicken Recipe

Roasted chicken recipe ingredients:

  • 1 Medium Onion, organic, cut in half, sliced
  • 2 Tablespoons grass-fed Butter (such as Kerry Gold)
  • 1 Cup of dry white wine, such as Saviougon Blanc (or water)
  • 1 Whole Chicken, organic and pasture-raised preferred, rinsed and patted dry
  • Unrefined Sea Salt, such as Celtic Sea Salt
  • Pepper, organic

How to prepare the roasted chicken recipe at home:

I use an oval-shaped 8 quart slow cooker for this recipe, as the chicken fits in it nicely.  If you have a round slow cooker, be sure to use a smaller chicken, about 3 pounds.

Layer the onion slices along the bottom of the slow cooker.  Pour the cup of wine (or water) over the onions.  Place the chicken on top, breast side up (in round slow cookers, neck side down).  Insert a tablespoon-sized chunk of butter under the skin of the breast on each side.  Sprinkle liberally with salt and then some pepper.

This is ready in as few as 4 hours on HIGH and as long as 10 hours on LOW.  If you are going to be gone longer than 10 hours, I would suggest you program your slow cooker to turn on later so that the chicken is not over cooked.  (You can program with fancier slow cookers or use a light timer which you can get at any hardware store.)  Don’t let the chicken sit on the counter more than 2 hours before starting to cook.
